One Pan Sausage, Bacon & Chickpea Casserole (ready in 25 mins)

I made this last night and it was just so quick and easy I had to share!!  It is an old recipe from a Sainsburys magazine which I have rediscovered.

Serves 4

16 Pork Chipolatas (though I didn’t have those so halved a pack of normal sausages)
3 stalks celery, trimmed and chopped
4 rashers smoked bacon, chopped (or snipped using Professional Shears!)
2 x 400g tins chopped tomatoes
1 x 410g tin chickpeas, drained
1tbsp chopped rosemary (or 1tsp of dried)
1tsp brown sugar

  1. Heat Family Skillet and brown the chipolatas, celery and bacon together for 10 mins or so.
  2. Add the tomatoes, chickpeas, rosemary, sugar and some seasoning.
  3. Bring to the boil, then cover and turn the heat to low, leave to simmer for 15 mins.

I serve this with warmed naan bread but any bread to mop up the juices will do.  YUMMY (even for those non-adventurous folk who aren’t really sure what a chickpea is)!!!
